WHAT'S COOKING IN THE KITCHEN THIS MONTH -

SUMMER SAUCES

THURSDAY, MAY 26, 2016 - 6:00 P.M.

CHEF ALYSSA WILHITE

COST:  $35.00

Just in time for Memorial Day grilling, this class will focus on lighter sauces that will complement most grilled meats, seafood, and vegetables.  While French sauces, such as cream based (Alfredo, Bechamel) and stock (mushroom, demi-glace) are generally richer, Romesco, Chimichurri, and Bagna Cauda are created out of fresh herbs, vegetables and vinegar.  The sauces add richness and flavor without the heaviness of traditional French sauces.  The bonus to these sauces is that all require little to no cooking.  A great idea for the  days ahead when our temperatures heat up!

As with all classes, your paid reservation will hold your seat in the class.

Due to the many activities that take place in May, we are offering one class only this month.

These classes are geared towards a person who has never touched a homemade jar of relish or jam to a novice who wants a solid background in the why's, what's and how's of canning.  The series will be held on Saturday mornings at 10:30 with the option of attending one class or all three (discount price if attending all three).  This class will be hands on and limited to 8 per class.

Summer is full of celebrations, family reunions, picnics,  and casual get togethers. Sometimes coming up with a fresh desert idea can be tough, not to mention slaving over a hot oven can be less than appealing as East Texas moves into July.  If this sounds familiar, then join us for our Icebox Deserts Class on June 30th.  Chef Alyssa Wilhite will present fabulous array of deserts that are easy to prepare, use minimal oven time, and cool to the palate.   If you are in need of a new recipe for summer deserts or just tired of the usual, you will want to attend this class.

The local farmers markets are filling up with the bounty of fresh produce in spite of our rainy spring.  Fresh from the Farmers Market will celebrate the summer vegetables and fruits at their peak freshness with recipes that deliver maximum flavor with minimal treatment.  The class will feature produce purchased at one of the local Tyler farmers markets earlier in the day with Chef Alyssa preparing dishes that will highlight the fresh flavors.

Many of you are devoted fans of the Rose City Farmers Market held at Jul's every Saturday morning.  The Kitchen Drawer welcomes Haute Goat Creamery, one of the market regulars, in the store on Tuesday, July 28th, 6:00 P.M..  Laura Vanderbilt will present the art of making artisan cheese, explain the various types, offer samples along with recipes for you to recreate in your kitchen with cheese Haute Goat Creamery.  Participants may bring their choice of wine with them to enjyo during the class;  a Sauvignon Blanc ishighly recommended to pair withthe various cheeses which will be sampled during the class.

The Kitchen Drawer is thrilled to have Rick Oruch from Sea Breeze Fish Market and Grill, back in the kitchen for FRESH FISH on Saturday, August 8th.  We were fortunate  to host Rick last fall for classes featuring fresh fish from his market.  Chef Alyssa will be preparing the various types of fresh fish that Rick has selected.  As with the previous classes, Rick will also be bringing fresh fish for you to purchase and take home for your family to enjoy.   There will be a morning session as well as an afternoon session. This is one class you want to attend if you need tips on cooking fish or want to incorporate more fish into your diet!

Spring

SPRING

After the snow, ice, and rain we have experienced in East Texas, many are wondering if Spring is ever going to get here.  Yes, we will be missing some of the cooler temperatures in August when our thermometers might read in the triple digits but right now we could use some sunshine.  With the anticipation of sunnier days ahead, we have new items to brighten your kitchen and tabletop.  Also, there are some new events coming to The Kitchen Drawer in March and April that we hope you mark your calendar for them.  Many of you have inquired about our classes for March and due to scheduling of private events, our chefs' schedules and other factors, we will be offering only one class this month.  We are planning a more robust schedule of classes for the upcoming months so be on the lookout.

We will be welcoming Chef Jackson York in the kitchen for SWEETS FOR SPRINGTIME, a pastry class.  Many of you may remember Chef York from The Edom Bakery where he developed the concept of "Country Gourmet", bringing gourmet cuisine to everyday people.  The response was overwhelming, which led to the creation of an eight week cooking class for people to learn the culinary tips, techniques and skills utilized by many professional chefs.  He is continuing his journey in the culinary arts today at Lakeview Methodist Conference Center.  The Kitchen Drawer is pleased to offer this class to friends and patrons on March 24, 2015.  Additional details for the class are given below.

You will also want to save the date for April 11, 2015.   Tyler Woman's Building, Inc. will present the  8th Annual Celebrity Chef Event  featuring CHEF STEPHAN PYLES.  The event will feature out of this world culinary experience with the 2014 Dallas Morning News Chef the Year.   Pyles is a fifth generation Texan and founding father of Southwestern Cuisine.  He was the first person in the Southwest to win a James Beard Award for Best Chef and the first Texan to be inducted into the Who's Who of Food and Wine in America.  A tireless philanthropist, Pyles is a founding board member of Share Our Strength as well as a life board member of the North Texas Food Bank.  In 1988, he founded The Hunger Link, Dallas' perishable food program that acts as a conduit between restaurant and hotels and ministries and food oitchens.  This is a great event that you don't want to miss!  For more information, please contact The Tyler Woman's Building.

In response to popular demand, we will be hosting MOBILE KNIFE SHARPENING at The Kitchen Drawer on Saturday, April 25, 2015 from 10:30 - 3:30.  You may bring knives in advance and leave if you are unable to be present on April 25.  Carter amd Jack Gresham sharpen straight edge and serrated knives, cleavers, scissors as well as make repairs such as a broken tip, major chip, bolster and major re-shape.  Please note that the company does not sharpen Cutco knives.  For pricing information, please contact our store at 903-592-9992.

SETTLING INTO 2015

It is hard to believe that January has come and gone.  Life has returned to normal - whatever that may be.  We have been busy restocking our inventory to offer a variety of things to motivate you in all things, whether it be utensils, pot and pans or some fresh ideas for classes.  Many of us watch various cooking shows for the entertainment as well as for new ideas so The Kitchen Drawer has taken a cue from these shows for our February classes.  Our own Chef Alyssa  will be put to the test in Quickfire Challenges and offer fresh ideas with a paella class.  With Valentine's Day around the corner, why not create your own sweet offering for your sweetheart? Chocolatier Karen Ream will show an easy quick treat that can be used for savory as well as sweet in our Sweets for the Sweet class. As always, our classes are limited to 8 and your paid class fee reserves your spot.

SWEETS FOR THE SWEET

MONDAY, FEBRUARY 9TH

PAELLA

THURSDAY, FEBRUARY 12TH

6:00 P.M.

Many of us get into a rut with preparing the same recipes especially during the winter months.  We crave filling dishes but want to venture outside the usual stews, casseroles and meat and potatoes.  Chef Alyssa Wilhite, will  give insight on the Spanish rice dish,  paella, (pronounced  pi-AY-yuh).  The dish includes different combinations of vegetables, meats and fish and seasoned with saffron which turns the rice a wonderful golden color.  This dish will easily become your go to dish that is easy as well as impressive.

CHEF'S CHALLENGE

THURSDAY, FEBRUARY 26TH

6:00 P.M.

COST: $12.00

We have all seen the various cooking shows where the chefs are given an ingredient or a type of dish to make in 30 minutes or less.  Our own Chef Alyssa is always great under pressure so The Kitchen Drawer is hosting our own version of Chef's Challenge, aka Quickfire Challenge.  Each participant will be designated an item to bring to the class and it will be added to a group of items;  Chef Alyssa will then pick a group and be given a certain amount of time to prepare a certain dish or a dish featuring a particular ingredient.  She will have three 30 minute challenges during the course of the evening.  There may even be some students who join together as a throwdown challenge to her!  While there will be no particular technique as the focus of the class, we will be able to reference in our own kitchens the tips and methods that Chef Alyssa utilizes to create the dishes in these challenges.  This will be a fun evening where we get to see Chef Alyssa in the hot seat!

COOKING CLASSES

Great news- we have expanded the days and times that we are offering cooking classes. In addition to evening classes, we get together Saturday mornings and some weekday mornings and afternoons as well.  Some of our classes (ie. knife skills) are an encore of previous popular classes. Be sure to check the calendar for updates and class fees.

We are very fortunate to have so many friends at The Kitchen Drawer who are renowned for their amazing culinary skills.  One such friend, Jaye McGuire, has graciously agreed to share her love of cooking and delicious creations with us October 30th 12:00-1:30 in a class we call Autumn Flavors. Some of the items Jaye will be making in our kitchen include Guiness stew, quinoa salad, roast chicken and a rustic apple tart. Jaye is no stranger to cooking and baking for others.  When she was a legal administrator, members of the law firm often bought her special pound cakes, pies and cookies and she still sends them to friends at Christmas. She has no professional training, only a love for food and cooking. Jaye's vibrant personality is sure to translate into an entertaining and informative class.
