(WHICH WE ARE GRATEFUL FOR)HAD LEFT SHELVES AND WALLS BARE. NEW MERCHANDISE IS BEING
RECEIVED AS WELL AS OUR FAVORITES BEING RESTOCKED. A NEW SCHEDULE OF CLASSES IS ON THE
BOOKS FOR FEBRUARY WITH CHEF ANTHONY PETRECCA.

SATURDAY, FEBRUARY 19th TO REFRESH AND REPAIR KNIVES.

KNIFE SKILLS ARE A BASIC TENET OF COOKING. WHETHER A BEGINNER OR JUST NEEDING A
REFRESHER, THIS WILL BE A GREAT CLASS TO KICK OFF YOUR CULINARY YEAR. CHEF ANTHONY WILL
PRESENT THE BASIC KNIFE CUTS NEEDED FOR FOOD PREPARATION. HE WILL FOCUS ON MIREPOIX
AND THE HOLY TRINITY SINCE WINTER IS THE IDEAL TIME FOR SOUPS AND GUMBOS. KNIVES AND
CUTTING BOARDS WILL BE PROVIDED; CLASS PARTICIPANTS MAY BRING THEIR OWN KNIVES TO USE.

KNIVES CAN BE DROPPED IN ADVANCE OR WHILE YOU WAIT. PLEASE MAKE SURE THAT KNIVES ARE CLEAN TO ENSURE THE
BEST RESULT.

A NEW YEAR ALLOWS US TO FOCUS ON NEW SKILLS AND REFINING EXISTING ONES. A SERIES ON MOTHER SAUCES
WILL EXPAND YOUR CULINARY CONFIDENCE AND REPERTOIRE. MOTHER SAUCES SERVE AS THE FOUNDATION FOR
SECONDARY SAUCE VARIATIONS. EACH MOTHER SAUCE IS CATEGORIZED TO ITS UNIQUE BASE AND THICKENER.
THIS WILL BE THE FIRST IN THE SERIES ON SAUCES.
