Sweet and Spicy Chicken Meatballs

1 lb. Ground chicken

1/3 C. Panko

1 Lg. egg, beaten

2 T. Chopped fresh cilantro

1 Clove garlic, minced

1 ¼ t. Kosher salt

½ t. Ground black pepper

¼ C. Red pepper jelly

1 T. Creole mustard

1 ½ t. Apple cider vinegar

Garnish: Chopper fresh cilantro

Preheat oven to 350F.  Line a large rimmed baking sheet with foil. Place a baking rack coated with cooking spray into baking sheet. 

In a large bowl, stir together chicken, bread crumbs, egg, cilantro, garlic, salt, and pepper.  Using a tablespoon, divide and shape meatballs; place on prepared pan.  Bake until food thermometer registers 165F, about 18 minutes.

In a large bowl, stir together pepper, jelly, mustard, and vinegar.  Place a small amount of mixture with each meatball, garnish with cilantro (if desired), and serve.
