CRANBERRY WHITE CHOCOLATE BLONDIES W/ CREAM CHEESE ICING DRIZZLE
Cranberry White Chocolate Blondies:
12 T. Butter, melted
3/4 C. Sugar
3/4 C. Brown Sugar
1 egg plus 1 egg yolk
2 t. Vanilla
2 1/4 C. Flour
1 t. Baking soda
1/2 t.Salt
3/4 C. White chocolate chips
3/4 C. Dried cranberries
Icing:
3/4 C. White chocolate chips, melted
8 oz. Cream cheese, room temperature
1 C. Powdered sugar
1 T. Orange zest
Preheat oven to 350F. Line a 9x9 baking dish with foil or parchments, and set aside.
In a large bowl or the bowl of a stand mixer, mix together the melted butter, suagr, and brown sugar. Add the egg, egg yolk, and vanilla and mix until combined.
In a small bowl, whisk together the flour, baking soda, and salt. Add the flour mixture to the wet ingredients, and mix until just combined. Fold in the cranberries and white chocolate chips. Spread the dough in the prepared pan, into an even layer.
Bake 40-45 minutes, or until golden brown.
Meanwhile, make the icing by mixing the melted white chocolate, cream cheese, powdered sugar, and orange zest.
Once the blondies are cooled, drizzle or spread the icing over them.
